How to make granola at home: an easy recipe (oven, air fryer or no oven)

"How to make granola" is the most searched granola question in Pakistan, ahead of prices and brands. Fair enough: granola is just oats, nuts, seeds and something sweet, baked low and slow until it turns crunchy. We bake it for a living in Lahore, and this is the easy version we would teach a friend. There is a method for every kitchen: the oven, an air fryer, or a karahi on the stove.

Homemade honey granola clusters with oats, almonds and seeds

The goal: big golden clusters, crunchy all the way through

Quick recipe card

  • Makes: about 600 g, or 15 bowls of 40 g
  • Time: 10 minutes to mix, 25 to 30 minutes to bake, 30 minutes to cool
  • Oven: 150°C (140°C with a fan). Air fryer: 140°C, in two batches. No oven: a heavy pan on the lowest flame.

Ingredients

  • 3 cups (240 g) rolled oats, the flat flaky kind, not instant oats
  • 1 cup (140 g) nuts, roughly chopped: almonds, walnuts, cashews or a mix
  • ½ cup (70 g) seeds: pumpkin, sunflower, flax or til (sesame)
  • ⅓ cup (110 g) honey
  • ¼ cup (55 g) oil or melted desi ghee
  • 1 tsp cinnamon, 1 tsp vanilla essence and a pinch of salt
  • ½ cup (75 g) raisins, chopped dates or cranberries, added after baking

No honey? Melt 100 g gur (jaggery) with 2 tablespoons of water and use that instead. It gives a deeper, toffee-like taste.

Everything you need: rolled oats, nuts, seeds and honey

How to make granola in the oven

  1. Heat the oven to 150°C and line a large baking tray with butter paper.
  2. In a big bowl, mix the oats, nuts, seeds, cinnamon and salt.
  3. Warm the honey and oil together for 30 seconds until runny, stir in the vanilla, and pour it over the oats. Mix until every flake looks glossy.
  4. Spread it on the tray in an even layer about 1 cm thick, then press it down firmly with the back of a spoon. Pressing is what makes clusters.
  5. Bake for 15 minutes, turn the tray around, and bake for another 10 to 15 minutes until golden at the edges. Do not stir if you want big clusters.
  6. Leave it on the tray until it is completely cool. Granola is soft when hot and turns crunchy as it cools. Break it into chunks and mix in the dried fruit.

How to make granola in an air fryer

Use a cake tin or a foil tray inside the basket, because loose oats fly around in the fan. Make the mixture as above, press half of it into the tin, and air fry at 140°C for 10 to 12 minutes, checking every 3 minutes after the first 8. Air fryers brown fast, and honey goes from golden to bitter in a minute. Let it cool, break it up, and repeat with the second half.

How to make granola without an oven

Use a heavy karahi or non-stick pan on the lowest flame. Toast the oats and nuts dry for 5 minutes, stirring, then add the honey and oil and keep stirring for 8 to 10 minutes until golden and fragrant. Tip it onto butter paper, press it flat and let it cool completely. Stovetop granola is crunchy but makes smaller clusters, because you have to keep it moving.

Three tricks for big crunchy clusters

  • Press, don't stir. A firmly pressed layer that bakes undisturbed sets into slabs you can break up.
  • Keep the heat low. At 150°C the granola dries out before the honey burns. At 180°C the outside darkens while the middle stays chewy.
  • Cool it completely. Granola crisps as it cools. Touch it while warm and it breaks into crumbs.

Optional: one whisked egg white mixed in before baking gives extra-crunchy clusters. Leave it out if you do not eat eggs.

Mistakes that make granola soggy or bitter

  • Adding raisins or dates before baking: they burn and turn hard. Always add dried fruit after.
  • Spreading it too thick: the middle steams instead of crisping. Use two trays if you need to.
  • Putting it in the jar warm: the steam softens everything. Wait until it is fully cool.
  • Using instant oats: they turn to dust. Rolled oats hold their shape.

How to store homemade granola

An airtight glass jar at room temperature keeps it crunchy for two to three weeks. In monsoon humidity in Lahore or Karachi, close the lid every time; an open jar goes soft in a day or two.

Desi twists to try

  • Pista elaichi: pistachios, with ½ tsp cardamom instead of cinnamon. It tastes like kulfi.
  • Chai masala: cinnamon, cardamom and a pinch of ginger and clove. Made for evening chai.
  • Gur and saunf: jaggery instead of honey, with a teaspoon of fennel seeds.
  • Chocolate and date: 2 tablespoons of cocoa in the mix, and chopped dates stirred in after baking.
  • Coconut almond: half a cup of desiccated coconut added for the last 10 minutes of baking.

How to eat it

A 40 g handful, about four heaped tablespoons, on a bowl of dahi with fruit is a full breakfast. It also works in lassi, with warm milk on winter mornings, or with chai instead of biscuits. For more ideas, see our granola bowl ideas, or turn a batch into no-bake granola bars.

Is homemade granola cheaper?

Usually yes, per gram, if you already keep nuts and honey at home. The oats are the cheap part; the nuts, seeds and good honey are most of the cost. What you pay for in a jar is the time, a consistent bake and the crunch. See granola prices in Pakistan to compare.

No time to bake?

That is why we exist.
